Now the days are getting longer and the sun is starting to appear more regularly (although it’s not quite time to ditch the coats yet) I thought I’d make some fun, springtime treats.

I wanted to do something relatively quick and easy, and Rice Krispie treats seemed like the perfect option…


  • 90g unsalted butter
  • 400g marshmallows
  • 200g RiceΒ Krispies
  • 1 tbsp milk
  • 200g chocolate – I used white but you can use whatever is your favourite
  • Topping if you want – I used Smarties, but you could use Mini Eggs or something similar for a more Easter-y treat


  • Melt the butter in a large saucepan over a low heat
  • Add 300g or so of marshmallows into the melted butter and stir until melted and gooey
  • Add the tbsp of milk and then add in the rest of the mashmallows
  • Once they’re all pretty much melted (it’s okay if there are a few little lumps of marshmallow), take the saucepan off the heat
  • Add in the Rice Krispies – do this slowly so you have time to mix them all thoroughly into the marshmallow
  • Put the mixture into a lined baking tray and pat it down
  • You can finish here and leave it to cool and then cut up if you just want simple Rice Krispie squares, or you can add some pretty and tasty toppings…
  • Melt the chocolate and drizzle over the top of the Rice Krispies in the tray
  • Press smarties or whatever topping you fancy into the mixture
  • Then put into the fridge to cool
  • Once it’s cooled, cut up in squares and enjoy!
