Chewy Sultana Cookies
When it comes to food, biscuits are definitely my biggest weakness. I could quite happily sit and eat an entire packet, which is not a good diet. So, I thought I’d do some baking and make a slightly healthier alternative to a packet of chocolate chip cookies…
I decided to follow Deliciously Ella’s recipe for Chewy Sultana Cookies. Quick and easy, and made with ingredients I already had, which was an added bonus.
- 270g oats
- 150g sultanas
- 4 apples
- 4 bananas
- 3 tsp honey
Pre-heat the oven to 200 degrees / Gas mark 6.
Grate the apples and mash the bananas (which was oddly satisfying) and mix them together.
Add them into a bowl with the rest of the ingredients and mix them all together.
Grease a baking tray with either paper or coconut oil, and dollop the mixture onto the tray in lovely cookie shapes.
Bake in the oven for around 25 minutes. I put them on the middle shelf as I didn’t want the sultanas to burn.
Once they’re baked (they should still be nicely squidgey) leave them to cool for 20 minutes or so and then eat!
The original recipe includes cinnamon, which I thought I had in my pantry, but turns out I didn’t. Then it was raining and the shop seemed far away…so I left it out. I think they would be much better with a sprinkle of cinnamon, but for a first attempt, I was pretty pleased with them!
